Westholme 和牛群包含離開日本的最受認可的和牛。三位出生於日本、在 Hongen 註冊的冠軍種公馬是 Westholme 牛群的創始族長——001 Hirashige-Tayassu（來自 Kedaka 系）； 002 Itomoritaka（來自 Fujioshi 線）和 003 Kitateruyasu-doi（來自 Tajiri/Tajima 線）。這些公牛與 Hongen 註冊的 Kedaka、Tajiri 和 Fujiyoshi 母牛雜交。
Westholme 牛肉沒有添加激素，也沒有經過激素生長促進劑 (HGP) 處理。
